Gelatin protein is a collagen that is obtained by enzymatic hydrolysis and purification by partial acid hydrolysis (type A), or partial alkali hydrolysis (type B), from the animal's collagen. The protein that contains gelatin contains 18 amino acids, seven of which are essential for the human body. In addition to less than 16% of the water and inorganic salts, the gelatin content of protein accounted for more than 82%, is an ideal source of protein.
